I have a question.

I forgot my ubuntu username and password and mythtv username and password (I know, I know...)  Any way to recover either of these?

I just decided to reinstall everything.

ok, A) Never edit the /etc/passwd file. That is a bad thing to do, the password is based on a checksum with the username, change user names with useradd
B) to recover the ability to enter your root account check out this link http://www.linuxforums.org/security/howto:_recover_root_password.html it should help you out.

So I renamed the root account on CentOS the other day just like you can rename the Administrator account in Windows.  I did it by editing /etc/passwd.  Now I can't login as root anymore, or "su -" and this causes problems in trying to administrate things...is there any way to recover this?

What do you need?  It might be better if you have more than one question that we talk on AIM or some such.
